I need some new ideas. Because of my job, I spend most of my work days driving from house to house visiting families. As such, I generally eat lunch (and sometimes breakfast) while driving. What I need are some new ideas for healthy foods that can be eaten with one hand on the steering wheel (and a minimum of mess). I have a cooler to keep things cold, but cannot heat anything up. For a while I was eating tortilla wraps with lettuce and lunch meat inside, but I've grown bored with them. I've tried tuna/egg salad, and pbj in tortilla wraps, but those are too messy. I flat just don't like salad, so that's out. I've done some sliced fruit and veggies (no dips), but its not always enough to hold me over for a full work day. Lunch meat and crackers with cheese works well, other than the crackers getting soggy. I've eaten plenty of granola bars, pretzels, trail mix, homemade breakfast bars, cheese crackers, etc, but I'm hoping someone here will have some creative ideas I haven't thought of yet. Interesting suggestions I've heard so far: chick peas with lemon juice and salt- I think I'm going to try this, since I love hummus and I can picture just eating chick peas. Gogurts, frozen. I'm wondering if I could make these up myself from yogurt I like instead of buying them. Any other ideas?

Hummus dips are quite smart and healthy choice idea. How about low-fat cream cheese with some lettuce leaves.

Doesn't it get watery if the lettuce isn't all the way dry? I've thought about hummus, but it has too much potential to drip, plus the thought of trying to dip chips or pitas while driving is scary.

Could you do shakes? There are tons of things you could add to a blender and drink! I love fruit and yogurt shakes, maybe you could do them the night before and freeze them, then they would be thawed by lunch time? I have a recipe somewhere for roasted chick peas, they are more like nuts, kinda dried out. I will see if I can find it. Are sandwiches out? or different kinds of wraps? What about tortillas spread with cream cheese and then topped with veggies and rolled up? Or pita pockets, they are easier to eat than tortillas. Drinking soup out of a travel mug is another idea, but you would have to heat it up somehow. Or keep it in a thermos. That's all I can think of right now

I could do the shake idea...I've tried that before and they work well for breakfast. I'm watching for strawberries to go on sale so we can stock up and freeze a bunch. I'd like the roasted chickpeas recipe- that sounds interesting. I think soup is out unless anyone has a recipe for chilled pureed soup...I live in Phoenix and in a month or less it will be 110* here. Also makes parking somewhere and eating quick a not-so-fun idea. Cloak- my car is definitely full of crumbles. I vacuum it out when it gets really bad. I technically don't have a lunch break, other than my time driving from one place to the next. Parks are rather scarce here, especially when its HOT out.

Stacy ~ Knorr makes real cool soup recipes that are home-made and ideal for work since they are puree. All you have to do is empty the cartoon in a saucepan and heat it up and pour it in your travel mug or thermos. The taste is heavenly. I like almost all of them. Otherwise if you like to make soups at home, you need that machine/robot that turns soups into puree. If I find some other ideas; I will post back!
