Chelle, I've made taco stuffed shells before. They are pretty good. Mine is basically HB meat (taco seaoned) and refried beans. Stuff the shells, top with taco sauce, and cheese and black olives. Serve with sour cream! YUM!

This recipe calls for hamburger meat cooked like you would for tacos and then you mix in cream cheese, simmer until melted. Stuff the shells, top with taco sauce and bake. Then 15 minutes before done top with cheese and crushed tortilla shells.

Those both sound good to me... like enchiladas with pasta instead of tortillas. What type of taco sauce do you use? Ortega Mild is my favorite, but it can be hard to find here.

I dont buy taco sauce, I just mix salsa with a little tomato sauce, I modify my recipes alot!

LOL! I do that same thing- I mean modify like crazy. But if something called for taco sauce, I'd wait on my bro to bring me some Ortega from Nashville. He does that sometimes.

Those do sound good.

Tonight is Lentil Chili, I only used about half the normal amount of ground beef. We'll see if DH notices

1 lb. chicken breast, cut into bite size pieces
2 cups sour cream and onion chips, crushed finely

melted butter (it usually takes about 3-4 tbsp. of butter)

Preheat oven to 350 degrees. Dredge chicken into egg and then coat with crushed potato chips. Place on cookie sheet and top nuggets with melted butter. Bake for 25 minutes or until done. Serve with favorite dipping sauces.

Hubby liked the stuffed shells I did not so meals with one of like it, but the other doesn't rarely gets made again. We each have 1 meal that is not the others favorite, but we make an exception when the other is craving that meal.

I wanted to order pizza so bad, but ran the numbers and it just didn't fit in the budget. I went to Costco and bought some frozen chicken courdon blue. We had that with broccoli. I had raspberry yogurt for dessert. I'll also have some peaches. No starch or grain. I didn't feel like fixing anything. Dh is out of town on business. He probably at at Red Lobster or something like that.

Well we didn't have the meatball subs dd went in hospital instead and stayed until last night.
So tonight we are having the meatball subs
