It's an old family breakfast recipe. I think my cousins would spread it with jelly sometimes. They are kind of like crepes. We alwyas used butter and sugar. I think when we were little we used honey instead of sugar. They will each get 2 eggs in them with it though. I'll make some bacon too.

It's real easy. I have my cookbook right here:

Flinzen
4 eggs
1/4 tsp salt
2 cups flour
2 cups milk

Blend till smooth. Spread thinly on hot pan. flip when edges are starting to be cooked. I use my big griddle and can do about three at a time and by the time I get the 3rd one spread the first is almost ready to flip

My uncle is an improv cook and he adds the following to the mixture:

a little oil
a little sugar
a little baking powder

I have started doing that too. the baking powder makes them a little lighter. I don't know how much and if I asked him he would say "I don't know...just "some"" He doesn't measure anything actually.

It's not only about how much oil you are using. The temperature of the pan has a lot to do with whether it sticks or not. You have to work that out on your own stove, as it differs. A drop of water on the pan should skate around the pan, so it has to be hot, but not too hot either. It's an art.

mine always stuck. I got a griddle. Problem solved

But I think I didn't have a decent pan, because I was always able to make them on my mom's pan so I did know what temp they were supposed to be.

I cook them on my large, flat non stick electric griddle. THey start to release as the edges get cooked. SOmetimes Ithink I start with a little butter or bacon grease spread around but not after every one. WHen I didn't have a griddle for a few months I did them one at a time in my large cast iron skillet and it was a little trickier.

BUt, yes heat is the issue. IF the pan is real hot it starts to cook as soon as it hits.

BTW: You spread these real thin. I use a gravy ladle and pour one ladle and spread it witht he back so it is as thin as I can get it.

We are going camping, and I brought two supper meals, so it will either be hamburgers on the grill, or Pork Tenderloin rubbed with spices wrapped in bacon and cooked on the grill.

We're going out with out of town family. We're going to a local steak restaurant, but they have a great seafood au gratin with lobster and shrimp that I may splurge on. I'm hoping they have changed their menu since the last time I went to give a better choice of sides. Last time, it was baked potato, fries, or mashed potatoes...

The power was out for over 3 hours, so we went to Barnes & Noble to cool off, then walked next door to Chili's for dinner. We both had burgers.
