Does anyone have any tried 'n true recipes using canned salmon that you would share please? Thanks!

I think I have an Italian recipe. Although it asks for smoked salmon, I use tinned salmon and the taste is fabulous! So here we go:

Spaghetti with Smoked Salmon


Cooking time: 15 min [sm=chef.gif]
Portions: 4


3/4 pound (375 g) smoked salmon, sliced
2 TBS Olive Oil
1 onion, sliced
24 fresh Asparagus coarsely chopped OR (I use zucchini or carrots)
2 cups 15% cream or 35% cream OR (I use 2% milk)
1/4 cup white dry wine [optional] OR (I use white vinegar)
2 TBS flour
2 TBS soft butter
1/2 cup fresh basil or 1 TBS dry basil
Pepper
1 pound (500 g) cooked spaghetti. I use/prefer cooked Linguine since it is thicker and goes better with Salmon



* Cut Salmon in fine layers. In a casserole, heat oil. Add onion and cook till tender.
* Add salmon, asparagus, cream and wine. Bring it to boil. Let it simmer uncovered, from 2 to 3 minutes. Mix in flour and butter. Incorporate to sauce while stirring. Let simmer for 2 to 3 minutes. Add basil and pepper. Pour hot sauce over cooked pasta. Decorate with fresh basil if desired.

Salmon Patties

2 cans salmon, well drained, bones removed
1 egg
1/2 c. crumbs (bread, crackers, etc.)
1/4 a medium onion, chopped
1/3-1/2 a medium bell pepper, chopped
dash of garlic
dash black pepper

Beat egg in a measuring cup or small bowl. Combine all ingredients in mixing bowl, mix well. Form mixture into patties. Drizzle a skillet with olive oil, just enough to coat bottom. Brown patties in skillet, 2-3 minutes each side, until center is warm and sides are toasty.

Salmon Loaf

Follow recipe as above, but instead of forming into patties, put into a loaf pan or 8x8 pan and bake at 400 degrees for 25 minutes. You can top this with a tomato sauce like you would a meatloaf, or with a yummy lemon sauce (sorry, I don't have a sauce recipe! I just remember my mom making salmon loaf.)

Oh Rachel, my Mom used to make both of those recipes when we were kids...I just loved them and had forgotten about them...think I'll make them again soon![;)]

My mom in law does a pie where she mixes mashed potatoes with canned salmon and bakes it in a pie shell. Not my thing, but her family like it.

My mom used to make salmon patties when we were kids. It was my favorite meal. I tried to make it once right after I got married, but no one warned me about the black flaky stuff and the bone. [:'(]. I haven't made it since.
