Okay since everyone like soup share your favorite recipe here:
Navy Bean soup
Soak beans over night
Drain beans in AM
Place beans in crock pot with enough water to cover
add the following:
1 large chopped onion
1 cup shredded carrot
ham hock, or ham bone or chopped turkey ham
1 stick butter
cook on high all day until beans are soft adding water if needed
Serve with corn bread.

I am just learning the joy that is soup! Looks to me you can hardly go wrong by:

Saute an onion and garlic in olive oil
Saute some more veggies in there
Throw in some chicken broth
Throw in some cooked potatoes or rice
Throw in a litte cooked meat if you want
Add milk or cream if you want

thoroughly warm and serve with fresh bread and salad

Yum!

"Italian Elopement Soup"
(A quick version of Italian wedding soup)

First: make or buy a million tiny Italian meatballs. Freeze them spread out, then bag them.

For the soup:

Boil water, add chicken broth flavour (I use "Better than Bullion" paste)
Boil orzo pasta until nearly done
Add frozen meatballs, return to a boil
Add a few chunks of frozen chopped spinach, stir until thawed
Sprinkle with oregano and/or other Italian spices

Just like the restaurant, except you can have even more meatballs.

You can get smallish ones frozen at the grocery store, in the 'prepared foods' sort of frozen section -- but they are not quite small enough for me, so I make a bunch once in a while.

Fresh Tomato Soup with Parmesan Croutons

1/4 cup olive oil
4 tablespoons butter
4 carrots, peeled and finely diced
4 stalks celery, finely diced
3 medium onions, finely minced
3 cloves garlic, finely minced
14 large, ripe tomatoes, peeled and seeded or 3 quarts canned tomatoes
1/2 cup finely chopped fresh flat-leaf parsley
6 leaves fresh basil, finely minced
Salt and pepper

1. Heat oil and butter in heavy kettle over medium heat. Cook carrots, celery and onions until tender, about 20 minutes. Add garlic, cook until fragrant, 1-2 minutes (do not brown)

2. Add tomatoes and continue cooking for 20-30 minutes.

3. Remove from heat. Stir in parsley and basil. Let sit for 2 minutes. Taste, then season with salt and pepper and serve.

Serves 8-10
Freezes and cans well

As an appetizer--soup can be strained and thinned with half-and-half. Top with dollop of sour cream or creme fraiche, and garnished with fresh pesto.



Parmesan Croutons

1 baguette, cut into 1/4-inch diagonal slices
1/4 cup olive oil
2 cloves garlic, finely minced or use a garlic press
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup grated Parmesan cheese

1. Preheat oven to 450 degrees. Line baking sheet with parchment paper.

2. In bowl, mix olive oil, garlic, salt, pepper, and Parmesan cheese. Spread mixture onto bread slices, and place on baking sheet.

3. Bake until golden brown and fragrant, 5-7 minutes.

4. Let cool and store in air tight container.

Cauliflower Soup

Cut up cauliflower (I always use fresh, but you can use frozen).
onion
mushrooms (optional)
salt/pepper
put enough chicken broth in the pot to cover the cauliflower and boil until it is just tender.

remove from pot.

add about 2 to 3 tablespoons of butter and melt. Then add about 1/4 cup to half a cup of flower and mix. Slowly add chicken broth to thicken and then put your cauliflower mixture in.

Add tarragon (very important) and half and half to desired consistency and simmer for about five to ten minutes.

I also like potatoes and ham in mine, too

Cheesy Potato Soup

Peel and cut up some potatoes and carrots.
Saute some onion and garlic in butter.
Add chicken broth (enough to cover potatoes), potatoes and carrots.
Add ham if you want (my family wants!), pepper, marjoram, salt if needed, any other seasonings you like.
Simmer until potatoes are tender.
Add peas if you want (my family doesn't want).
Add half and half and shredded cheese.

Sorry, I never measure anything.

Zuppa Tuscana Soup (For LC'ers switch out potatoes and add cauliflower. Tastes just as good.)

Ingredients
1 1/2 cups onions
1/2 lb bacon
1 lb sausage (Jimmy Dean spicy works nice)
2 quarts water
3-4 minced garlic cloves
2 chicken bouillon cubes
4 cups kale
3-4 cups potatoes (cut up in small pieces)
1 1/2 cups heavy cream

Directions:

Fry bacon in a medium/large size skillet; drain fat, put on plate and let cool.
In the same skillet cook the sausage and set aside ( I put it on the back burner).
In a large soup/stew pan put cook onions until tender and clear.
Add in garlic and cook for a minute.
Add water and chicken boullion cubes.
Start to tear the bacon into bite size pieces and add to the pot.
Add sausage.
Add potatoes
Cook for 20-25 minutes (until potatoes are soft).
Add heavy cream.
Add kale (I tear mine into bite size pieces).
Simmer for 5-10 minutes.

I really enjoy this recipe! If you're a fan of Olive Gardens Tuscana soup, this is definitely a must.

Instead of Kale, could you use spinach? I'm not crazy about Kale. This looks so good! I may have to make this one!

Should have asked. How many does this serve? It seems like it makes a lot so I guess we can half it. There are only 3 in my family, although if my sister comes over she may eat some. I love soup! It is so good when it's cold out and with a good grilled cheese, I am in Heaven! Here is a Rachael Ray recipe that my nephew loves. He is picky and if he never had to have another veggie in his life, he wouldn't. Right now he likes raw carrots, cucumbers and raw broccoli. This soup is almost like Progresso Chickarina soup in the can but this is way better. The veggies are cut up so small that he eats them all and doesn't know he is eating them. Good way for your kids to get their veggies. The soup doesn't take long to make either.

Mini Meatball And Orzo Soup
1 TBSP. EVOO (Extra Virgin Olive Oil)
1/2 small onion, finely chopped
1 carrot, grated or finely chopped
1 rib of celery, finely chopped (this is not in the original recipe. I put it in because we had some that was going to go and my nephew would get one more veggie.)
1 quart chicken broth (I use Pacific Natural Foods Organic Free Range Chicken because it tastes the closest to I just boiled a chicken for the broth and it's not very salty.)
1/2 lb. ground chicken or turkey breast
3 TBSP. Parmigiano Reggiano cheese (If you don't have this, use whatever grated cheese you have.)
3 TBSP. breadcrumbs
1 egg
1 clove garlic, grated
2 TBSP flat leaf parsley, chopped
Salt and freshly ground black pepper
1/2 cup orzo pasta

Heat the EVOO over Med. heat in a med. pot. Saute the onion and carrot and celery for 5 min., then add the broth and bring up to a boil.

Mix the meat with cheese, breadcrumbs, egg, garlic, parsley, salt and pepper. Mix, and if the mixture is too moist, add a few more breadcrumbs.

When the soup comes to a boil, roll and drop 1-inch meatballs into the broth. Stir in the orzo and cook for 5 min. The pasta will not be done but will continue to cook when the soup sits for a few min.

Hi LuvsRickForever!

I'm sure spinach will work out just as good as the kale. I substituted the potatoes for cauliflower. :) As for servings, it has about 8 nice sized bowls full. It lasts us about a week or so.

Your soup sounds delicious too! Thanks for sharing. I really love all these new recipes.

I told my mom about the soup and she said get the recipe so we will be making your recipe, Liv4Him 06. As for mine, I can attest to how wonderful it is. It makes a lot so we froze some. I think we have enough to make one more bowl and that will go to my nephew when he comes over. We will just thaw it out and he will be a happy camper.

I had this soup in a little cafe. I wasn't very enthused about it when I ordered it, but the other soup of the day didn't appeal. I loved it so much, I went home and searched the web until I found the recipe, which is surprisingly simple.

Shrimp & Corn Soup

1/2 pound of cooked shrimp
2 T. buttter
1/2 tsp. garlic powder
4 oz. cream cheese
1 can cream of potato soup
1 can cream of chicken soup
1 large can of white corn (or frozen white corn)
1 cup half and half
creole seasoning
tabasco sauce

Melt the butter. Add the cream cheese. Heat on low until the cream cheese melts. Add the soups, corn, and half and half. Heat. Add the shrimp. (if the shrimp are large, cut them in half.) Season to taste with the creole seasoning and tabasco sauce, but it is meant to have a lot of zip so don't be shy. Heat thoroughly.

For that Olive Garden soup, how much is 2 bouillon cubes? I use stock in a box because the cubes are way to salty. The first ingredient is salt! We do use Watkins chicken soup powder because salt is way down on the list but we are out. I'd love to make this one too.

TruthRevealved - I'm glad to hear you and DH enjoyed the soup. It's one of my favorites.

LuvsRickForever - I'm not too sure what the exact equivalent would be for two bouillon cubes. But you might want to start out with one tablespoon of stock and taste test the soup till it's to your liking. I am a salt-o-holic and usually add one more bouillon cube than this recipe recommends.
